Crockpot Stuffed Peppers

I have made these several times. They freeze well and I get multiple meals for my wife and I. I just made them for my children when everyone was home and they were a hit. This time I used ground pork with your taco seasoning and added some frozen Hatch peppers I had on hand. My wife likes this version best. Thanks for a great recipe. ~ Chip

– Slice the tops from the bell peppers and core out the insides. Set them into a crock pot or slow cooker.  – Heat the oil in a small pan and add the onion and jalapeno pepper. Cook to soften. – Add the garlic and cook, stirring.

– Add the ground beef and cook to brown it.  – Add the mixture to a large bowl and cool. – To the bowl, add the rice, black beans, crushed tomatoes, corn, shredded cheese and taco seasoning. Add salt and pepper to taste and mix.

– Spoon the stuffing into each bell pepper. – Add water to the bottom of the crock pot or slow cooker and cook until everything is cooked through and the peppers have softened to your preference. – Serve with cilantro and crema over the top, and your favorite hot sauce. Enjoy!
