This homemade Chipotle sofritas recipe is huge on flavor with chunks of tofu simmered in a spicy chipotle sauce, just like the original. Perfect for taco bowls, burritos and more.

Ingredients

– Remove the stems and seeds from the ancho and guajillo peppers, then dry toast them until the skins darken and puff up a bit.

– Cover the dried peppers with very hot water. Let them steep to soften. Drain and add to a food processor.

– Heat olive oil in a pan and add the onion and jalapeño. Cook them down to soften. – Add the garlic and cook another minute, until the fragrance blooms.

– Process the cooked vegetables, chipotle in adobo sauce, cumin, salt, pepper and hot sauce until smooth. Add fresh water and process further.

Slice the tofu into large pieces. Wrap them in paper towels and set a heavy weight on them to press out the moisture.

– Heat the pan back and add more olive oil, if needed. Add the tofu and lightly fry the pieces to lightly brown them.

– Break up the tofu with a wooden spoon, pour in the chipotle sauce, stir and simmer to let the tofu soak up the saucy flavor.
