Easy Baked Sweet Potato Tots {with Spicy Sriracha Sauce} - Recipe
These very easy baked sweet potato tots are seasoned with Cajun seasonings and served with a spicy Sriracha dipping sauce.

Cajun Sweet Potato Tots
- 1 large sweet potato should yield about 3 cups or so cooked
- 1 cup shredded Romano cheese
- 1 teaspoon garlic powder
- 1 tablespoon Cajun seasonings
- 4 tablespoons panko bread crumbs
- Salt to taste
For the Sriracha Sauce
- 1/2 cup mayo
- 2 tablespoons Sriracha sauce
- 1 teaspoon lime juice
- 1 teaspoon white wine vinegar
Cajun Sweet Potato Tots
Preheat oven to 425 degrees.
Bake the sweet potato about 45 minutes, or until it becomes very tender all the way through. Alternatively, you can microwave the potato on your potato setting about 7 minutes.
Allow cool and peel.
Add to a mixing bowl and mash with a spoon. Add remaining ingredients and mix well.
Form the mix into tater tot shapes, like mini logs. You can easily roll them into a ball then slightly flatten them on 2 sides to elongate them.
Set onto a lightly oiled baking sheet and bake for 20-30 minutes, flipping half way through, until nicely browned.
Serve with your Sriracha Sauce!
