Ingredients

  • 5 ounces chili peppers roughly chopped (I'm using a mix of paprikas, cherry peppers, and red jalapenos - ANY will work)
  • 2 tablespoons minced onion
  • 3-4 garlic cloves
  • 1 tablespoon chopped cilantro
  • ¼ teaspoon salt or to taste
  • Juice from 3 limes

Instructions

  • Add all of the ingredients to a food processor and process until smooth.
  • Taste and adjust for salt.
  • Store in the refrigerator in a sealed container.

Notes

Makes about 1.5 cups.
For a COOKED VERSION: Add the chilies, onion (unchopped) and garlic to a small pot. Cover with water, then bring to a boil. Simmer 10 minutes to soften. Drain, then process in a blender with the lime juice, cilantro, and salt until smooth.
