Fresh Green Tomato-Chili Pepper Sauce

Ingredients

  • 7-8 pounds green tomatoes
  • 1 pound green chili peppers

Instructions

  • Thoroughly clean the tomatoes and peppers.
  • Coarsely chop the tomatoes and peppers and set them into a pressure cooker.
  • Pressure cook for 30 minutes at high pressure. Allow to cool.
  • Process the tomato-pepper mixture with a food processor or stick blender.
  • Freeze in containers.

Notes

Makes about 3 quarts (2.8 liters).
