Aji Picante Sauce Recipe
A mildly spicy aji picante sauce recipe made with aji peppers picked straight from the garden. Serve it as a sauce or a salsa. Delicious!

- 2 large tomatoes stemmed and chopped
- 8 ounces Aji peppers about 25 or so, chopped – I used Aji Pineapples and Aji Fantasy peppers
- 1 small onion chopped
- 4 garlic cloves chopped
- 3 tablespoons cilantro
- 1 tablespoon cayenne powder
- 1 teaspoon ground cumin
- 1/3 cup water
- 1/3 cup cider vinegar
- Juice from 1 small lime
- Salt and pepper to taste
To a food processor, add tomatoes, Ajis, onion and garlic. Process to roughly chop.
Add remaining ingredients and process until smooth.
Add the sauce to a large pot and bring to a boil. Reduce heat and simmer for 15 minutes.
Cool and store in the fridge at least a couple days for theflavors to develop.
Serve and enjoy!
