– Heat the olive oil in a large pan and add the onion and peppers. Cook them down to soften.

– Add the garlic and Jamaican jerk seasoning with salt and pepper to taste. Then cook, stirring.

– Add the tomatoes and stir. Cook down the tomatoes.

– Add the coconut milk and simmer to thicken up. If it gets too thick, swirl in some water or chicken stock.

– Stir in the Parmesan cheese and remove from heat.

– While the Rasta Pasta is simmering, cook the fettuccine noodles. Drain and toss with the sauce.
