  • 1 head cauliflower washed, stems removed
  • 1 tablespoon olive oil
  • 1 green bell pepper chopped
  • 1 jalapeno pepper chopped
  • 1 small onion chopped
  • 1 stalk celery chopped
  • 1 medium sized tomato chopped
  • 2 cloves garlic chopped
  • 1 tablespoon Cajun seasoning blend
  • 2 tablespoons fresh chopped parsley
  • Fresh lime juice for serving


  1. Cut the cauliflower into florets and place them into a food processor. Pulse continuously until they are processed to about the size of small rice grains. Don’t overprocess, or it can become mushy.
  2. Heat a large pan to medium heat. Add the olive oil, peppers, onion and celery. Cook them about 5 minutes to soften.
  3. Add the tomato, garlic, Cajun seasonings and half of the parsley. Cookk about a minute or so.
  4. Add the cauliflower rice and cook another 5 minutes or so, stirring often, until it reaches your preferred doneness.
  5. Remove from heat. Stir in the remaining parsley, then squeeze in a bit of lime juice.
