- 2 tablespoons red chili flakes or ichimi / gochugaru
- 1 tablespoon dried orange peel finely zested or powdered
- 2 teaspoons white sesame seeds
- 2 teaspoons black sesame seeds
- 1 teaspoons sanshō or Sichuan peppercorns
- ½ teaspoon poppy seeds or hemp seeds optional
- ½ teaspoons ground ginger
- ½ sheet nori roasted
In a dry skillet over low-to-medium heat, gently toast the sesame seeds, peppercorns, and citrus peel until aromatic (be careful not to burn). Let them cool.
Use a spice grinder, mortar & pestle, or small coffee grinder to coarsely grind or pulse the toasted ingredients (peppercorns and peel especially) along with the red chili flakes, ginger, and nori (tear nori and grind). You want a textured mix, not ultra fine powder.
Combine everything thoroughly, then store in an airtight jar in a cool, dry spot. Use within a few months (flavor will start fading).
