- 1/2 cup extra virgin olive oil
- 3 tablespoons spicy brown mustard or use Dijon
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 4 garlic cloves minced
- 2 tablespoons fresh chopped rosemary
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1.5-2 pounds lamb chops
Whisk together the olive oil, mustard, vinegar, honey, garlic, rosemary, paprika, and salt and pepper to taste in a small bowl.
Add the lamb chops to a wide dish or sealable plastic baggie. Pour the marinade over the top and massage the marinade into the lamb.
Marinate at least 1 hour, or overnight for better flavor penetration. Cook the marinated lamb chops as desired.
