I love lamb chops. I prefer them either fired up on the grill, or deliciously pan seared, though I do love roasting a rack of lamb now and then.
A good marinade not only builds flavor, but helps keep the lamb tender and juicy, no matter how you cook it.
Let's talk about how to make lamb chop marinade, shall we?
Lamb Chop Marinade Ingredients

- Olive Oil.
- Mustard. I prefer spicy brown mustard, but Dijon is great, too.
- Balsamic Vinegar. Lemon juice is a good sub.
- Honey. You can also use brown sugar.
- Garlic.
- Fresh Rosemary.
- Paprika. I prefer smoked paprika.
- Salt and Black Pepper.
- Lamb Chops. This recipe works with loin chops, rib chops, sirloin, or shoulder, or any cut of lamb.
How to Make Lamb Chop Marinade - the Recipe Method
- Whisk together the marinade for the lamb in a bowl, then pour the marinade over the lamb chops. You can use a wide dish, or a sealable plastic baggie.
- Massage the marinade into the lamb chops, then cover and refrigerate.
- Marinate at least 1 hour, or overnight for better flavor penetration. Cook the marinated lamb chops as desired.
Boom! Done! Your lamb chop marinade is ready to go. Time to grill up some lamb chops!
Recipe Tips & Notes
- Freeze your marinated lamb chops for convenience. Simply make the marinade, then pour it over the lamb chops in freezer bags. Seal, then freeze for 3 months or longer. Thaw, the cook as desired.
How Long Should I Marinate Lamb Chops?
Marinate lamb chops at least 1 hour, though overnight is better.
You'll get good flavor with a simple 1-hour marinate, but you'll get more flavor penetration if you marinate the lamb chops overnight, or 12 hours.
Cooking Lamb Chops
I prefer to grill my lamb chops, though I also love a good pan sear. However, you can also broil them or bake them. You can braise lamb chops or cook them in a slow cooker, but then you won't get the delicious crust.
When grilling lamb chops or pan searing, you only need 4-5 minutes per side over medium-high heat, depending on the thickness of the cut.
It is best to cook lamb chops to temperature, regardless of your lamb chop recipe. Shoot for 125 to 130 degrees F (54 degrees C) internal temperature when measured with a meat thermometer for medium-rare.
Then rest for 5 minutes and serve.

Ingredients
- 1/2 cup extra virgin olive oil
- 3 tablespoons spicy brown mustard or use Dijon
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 4 garlic cloves minced
- 2 tablespoons fresh chopped rosemary
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1.5-2 pounds lamb chops
Instructions
- Whisk together the olive oil, mustard, vinegar, honey, garlic, rosemary, paprika, and salt and pepper to taste in a small bowl.
- Add the lamb chops to a wide dish or sealable plastic baggie. Pour the marinade over the top and massage the marinade into the lamb.
- Marinate at least 1 hour, or overnight for better flavor penetration. Cook the marinated lamb chops as desired.

This marinade is sooo good!!! I used hot smoked paprika but you couldn't feel the heat which is fine. I added extra fresh rosemary. You should marinate overnight for best infused flavors. I have had so many friends make this already within a few days of sending them this recipe. I will keep making this one. I love Mike's recipes, I cook a ton of them. Enjoy!

I am sure you are East Indian...this is a marinade for wild game meat such as lamb as North Indians eat. If you are vegetarian, this marinade will not apply to tofu. Not meaning to be rude, just truthful so you know.
