Check out our growing collection of Mexican recipes, all with a spicy and flavorful approach. Mexican cuisine is one of my very favorites around, and I love to explore its ingredients and techniques.

Mexican food is filled with so many wonderful flavors, from dried chili peppers that are rehydrated and churned into amazing sauces, to powerful herbs and spices to piquant fresh peppers that provide zest and heat.

Below you’ll find many recipes, including traditional and Mexican inspired. Here are some of my very favorites.

Rajas Poblanas is a traditional Mexican recipe made by roasting poblano peppers, slicing them into “rajas”, or strips, then simmering them with a creamy cheese sauce. They are hugely flavorful and sure to be your new favorite.

Mexican Picadillo. This is my favorite picadillo recipe made Mexican style with toasted ancho peppers, ground beef, potatoes and plenty of Mexican flavors. It’s great over rice or served with tortillas.

My recipe for Beef Enchiladas fills corn tortillas smothered in red enchilada sauce with shredded cheese and ground beef slowly simmered with lots of seasonings.

Chicken Tinga is a recipe for juicy shredded chicken slowly simmered in a zesty tomato-chipotle sauce. Serve it as tacos, tostadas, burritos, or tortas. Very easy to prepare.

If you’ve never tried Migas, you need to get on this on asap. They are lightly scrambled eggs with crispy tortillas, jalapeno peppers, tomato and melted cheese. Truly NOM NOM.
