Birria is a popular meat stew from Mexico of lamb, goat, or beef cooked low and slow in a seasoned chili sauce. It is served in different ways, but there are usually leftovers in our home, which is always a bonus.

I'll usually make birria tacos or birria ramen (Patty's favorite!), but this particular recipe hits the spot in an entirely different way.

If you're looking for amazing comfort food that's quick and easy to make, this is the dish you need. It's loaded up with melty cheese, a bit like quesabirria in pizza form.

Let's talk about how to make birria pizza, shall we?

Birria Pizza Ingredients

The full ingredients list with measurements is listed in the printable recipe card at the bottom of the post.

  • Pizza Dough. Make your own homemade pizza dough or use your favorite store bought dough.
  • Cornmeal. Helps the dough from sticking to the baking sheet.
  • Birria and Birria Consomé. You don't need an entire pot. This recipe is idea for leftover Mexican birria stew.
  • Shredded Cheese. Use Oaxaca cheese, Pepperjack, Monterey Jack, Mozzarella, Mexican blend or other melty cheese.
  • Jalapeno Peppers. Optional, for a spicy kick.
  • Garnish. Red pepper flakes, hot sauce, fresh chopped herbs, lime wedges or slices.

How to Make Birria Pizza - the Recipe Method

Preheat your oven to 450 degrees F (230 C), then roll out your pizza dough.

Set it onto a pizza pan or stone that's been lightly dusted with cornmeal, or use a lightly oiled baking sheet or cast iron pan.

Bake the dough for 8-10 minutes to par cook the crust. This will ensure a crispier crust that isn’t soggy.

Layer the pizza crust with birria consome (sauce), then birria meat, then shredded cheese, then jalapeno slices, and any of your other preferred toppings.

Bake for 12-15 minutes, or until the crust is browned and crispy, and the cheese is nice and melty.

Boom! Done! Your delicious birria pizza is ready to serve. This is the perfect comfort food, cheesy pizza with all the flavors of Mexican birria.

Recipe Tips & Notes

  • If your consome is too thin, you can thicken it by heating it in a small pot, then swirling in a slurry of flour of cornstarch. Use 1 tablespoon mixed with 2 tablespoon water. Pour it into the consome over medium heat and swirl until thickened to your liking.
  • This recipe also works with other sauces. Consider ranchero sauce, enchilada sauce, or adobo sauce.
  • You can make this with a pre-cooked crust. Just add all the toppings and bake until the cheeses are melted.
  • Vary up your pizza with any and all of your favorite toppings like white onions, fresh garlic, extra jalapenos, extra cheese, pineapple, you name it. Did somebody say "pineapple pizza"?

Storage & Leftovers

Leftover birria pizza will last up to 5 days in the refrigerator in a sealed container. You can easily reheat it in the oven or air fryer.

I do not recommend freezing the leftovers.

Ingredients

  • 1 pound pizza dough room temperature
  • 1 tablespoon cornmeal
  • 3/4 cup birria consomé stew broth plus more for serving
  • 1 cup birria meat (See my Birria Recipe at https://www.chilipeppermadness.com/recipes/birria/)
  • 1.5 cups shredded cheese use Oaxaca cheese, Pepperjack, Monterey Jack, Mozzarella, Mexican blend or other melty cheese
  • 1-2 jalapeno peppers sliced (optional)
  • Garnish. Red pepper flakes, hot sauce, fresh chopped herbs, lime slices or wedges.

Instructions

  • Preheat your oven to 450 degrees F (230 C).
  • Spread the cornmeal onto a lightly oiled baking sheet, pizza pan, or cast iron pan.
  • Hand roll and pull/stretch the pizza dough carefully into a 12-inch crust, then set onto the baking sheet or pan.
  • Bake for 8-10 minutes to par cook the crust. This will ensure a crispier crust that isn’t soggy.
  • Layer the pizza dough with birria consome (sauce), then birria meat, then shredded cheese, then jalapeno slices.
  • Bake for 12-15 minutes, or until the crust is browned and crispy, and the cheese is nice and melty.
  • Slice and serve! Garnish as desired!

    Mike, Patty,

    I’m not one for overloading Pizzas or going off piste Italian but this one sounds proper Mint mate!
    We’re off again for a week back to the Lake District but don’t expect reports of BBQ’s. Certainly not at this time of the year and equally so at the height of summer in Britain!
    We have internet there so I may just cook this. Saying that, there are two Chinese Supermarkets only a 20 minute bus ride away. Pantry stocking event coming up!
