This amazing prime sandwich recipe is perfect for leftover prime rib roast, served on toasted Italian rolls, topped with melted cheese and zesty horseradish cream sauce. One of my favorite sandwiches!

Leftover Prime Rib Sandwiches!
Did you, or ARE you making a standing prime rib roast for the holidays this year? If so, you WILL have leftovers. I can almost guarantee it.
As you recall, we made a HUGE prime rib roast recently - see my Spice Rubbed Prime Rib Roast with Horseradish Cream Sauce Post - and yeah, we had leftovers.
I sliced and froze the leftover meat for later use. Glad I did!
You certainly don't want any of that prime rib to go to waste. The flavor is sensational and you know what, it makes for an OUTSTANDING sandwich with prime rib leftovers.
LIKE SO. Prime Rib Sandwiches with Horseradish Cream Sauce.

Let's talk about how we make the recipe, shall we?
Prime Rib Sandwich Ingredients Needed
- FOR THE PRIME RIB SANDWICHES
- Prime Rib. You'll need several ounces medium-rare prime rib, sliced thin, depending on how many sandwiches you're making.
- Sandwich Rolls. I love Italian rolls, lightly toasted. Toasted bread is so good here.
- Cheese. Use a good melty cheese, like colby, provolone cheese or sharp cheddar cheese
- FOR THE HORSERADISH CREAM SAUCE
- Sour Cream. I like to use crema, though sour cream is perfect.
- Horseradish. Use either prepared horseradish or freshly grated horseradish root.
- Mustard. Spicy mustard rocks here, but Dijon is pretty darn awesome.
- Vinegar. Use your favorite, such as white wine vinegar or apple cider vinegar.
- Seasonings. Salt and black pepper to taste.
- FOR TOPPING
- 2 jalapeno peppers roasted and sliced into rings

How to Make Prime Rib Sandwiches with Horseradish Cream Sauce - The Recipe Steps
Assemble the Sandwiches. Divide the thinly sliced prime rib onto the Italian rolls.
If you want a warmer sandwich, you can heat the prime rib in a large skillet over medium heat with a bit of olive oil for a minute or so beforehand.
Cheese It Up. Top with shredded cheese. I've used Colby cheese here, but any melty cheese will work. Use your favorite.
I love it with pepperjack or a nice spicy ghost pepper cheddar. Yes!
Toast the Prime Rib Sandwiches. Set into a toaster oven or onto a baking sheet in the oven and toast until the cheese is nicely melted, about 4 minutes or so.
You can also use your oven set to broil. Remove from heat.
Make the Creamy Horseradish Sauce. In a small bowl, whisk together sour cream, horseradish, mustard and vinegar. Adjust with salt and pepper.

Dress It Up! Pour over the melted cheese, then top with sliced roasted jalapeno peppers.
Serve them up!
Boom! Good to go! I got your leftover prime rib sandwich right here, my friends. Perfect for leftover prime rib. Or maybe you'll make one just for this recipe. I know I would!
Steak sandwiches rule! Maybe serve it with some au jus. YUM.
Seriously. We loved the first recipe so much, I whipped together the same sauce to drizzle - OK, drench! - over the top of the sandwich.
Just look at it.
Sure, it's a messy sammich, but I wouldn't have it any other way. It's super easy to make, of course. I like easy.
Just take your slices of prime rib and drape them over some toasted rolls. I heated mine in a pan with a bit of oil for about a minute first, but you can start with cold roast beef.
Either way.
Top them with shredded cheese - I used Colby - then pop them into the hot oven until the cheese melts. I have to file this one under Quick and Easy recipes.

Recipe Notes & Tips
- Don't forget the jalapeno peppers. Roasted jalapeno peppers are a MUST for many a sandwich, particularly when it comes to prime rib sandwiches. I realize I may have gone a WEE BIT overboard with the roasted jalapeno slices, but my #JalapenoObsession is well documented. My fault. I know.
- Secret of the Horseradish Sauce. For the sauce, I've mentioned a couple times how easy this is to whip together. That is because, you know what? It's EASY to whip together. Or should I say whisk. Simply whisk together crema or sour cream with prepared horseradish, spicy mustard and white wine vinegar. Season it with salt and pepper to your personal tastes and DRIZZLE it over your prime rib sandwich. Or go ahead and do what I did and add a lot. It's TOO GOOD to drizzle sometimes.
- How Long Does Prime Rib Last? Prime rib will last a week in the refrigerator in a sealed container. However, it freezes nicely and will keep for 6 months easily. So easy to thaw, reheat, and make prime rib sandwiches!
- What to Serve with Prime Rib Sandwiches? Grab yourself some French fries or tater tots as a simple satisfying side, but I enjoy a nice side salad to go with mine.

I really love the combination of horseradish with prime rib. There is no better combination. Since it's leftovers, why not make it fun? I always love it cheesy. Most definitely do not let that prime rib go to waste.
