This homemade buldak ramen recipe is spicier than the original with all the flavors of Korean fire chicken (buldak) and ramen noodles in a fiery broth, easy to make!

Homemade Buldak Ramen - Extra Spicy
If you're a spicy food lover, you've likely seen Buldak Ramen exploding in popularity. It's everywhere now, available in stores and online.
Buldak ramen is actually the invention of South Korean company, Samyang Foods, based on the popular Korean street food, Buldak.
Buldak translates to "fire chicken", and is a fiery dish of chicken cooked in a spicy gochujang sauce. Inspired by the popularity of the dish, Samyang created this ramen instant noodles version called "Fire Chicken Stir Fried Noodes", or "buldak-bokkeum-myeon".
It became a company's best selling product and gained extra popularity with the online "Fire Noodle Challenge", where people video themselves eating the spicy noodles for social media.
Samyang offers a variety of flavors. This is my own homemade buldak ramen, which makes it extra spicy with lots of Korean gochujang, a fermented Korean chili paste, and gochugaru, Korean chili flakes, among other spicy ingredients.
It's fun to make ramen at home, and I hope you like this version as much as the original brand.
Let's talk about how to make buldak ramen, shall we?

Homemade Buldak Ramen Ingredients
- FOR THE BULDAK (FIRE CHICKEN)
- Boneless Chicken. Use chicken breast or chicken thighs.
- Gochujang. I use the HOT version.
- Gochugaru. Korean chili flakes. Use other chili flakes as a substitute.
- Soy Sauce.
- Sesame Oil.
- Corn Syrup. Use honey as an alternative.
- Garlic and Ginger.
- Vegetable Oil. For cooking.
- FOR THE BULDAK RAMEN
- Chicken Broth.
- Garlic and Ginger.
- Gochujang.
- Chili Crisp. Try my homemade chili crisp recipe.
- Soy Sauce.
- Chili-Garlic Sauce. Or use sambal oelek.
- Rice Wine Vinegar.
- Hot Sauce. To taste. Use your favorite. Sriracha works great for this recipe.
- Ramen Noodles.
- Extras/Garnish. Soft boiled egg or ramen eggs, chopped green onion, sliced hot chili peppers, spicy chili flakes, extra chili crisp for drizzling.
How to Make Homemade Buldak Ramen Noodles - the Recipe Method
MAKE THE BULDAK (FIRE CHICKEN)
In a large bowl, mix together the gochujang, gochugaru, soy sauce, sesame oil, corn syrup, garlic and ginger. Add the chicken and mix to coat.
Heat the vegetable oil in a large pan to medium-high heat. Add the chicken and cook 5-6 minutes, or until the chicken is cooked through. Set aside.

FOR THE BULDAK RAMEN NOODLES
Heat the chicken broth in a large pot to medium heat.
Swirl in the garlic, ginger, gochujang, chili crisp, soy sauce, chili-garlic sauce, vinegar, and hot sauce to taste. Stir until the ingredients are all mixed through. Bring to a boil.

Add the noodles and cook until the noodles are softened, 3-4 minutes.
Distribute the noodles and ramen broth to 2 bowls. Spoon on the spicy chicken (buldak), then garnish with half a soft-boiled egg, chopped green onion, sliced hot peppers, chili flakes. Drizzle on chili crisp and serve.

Boom! Done! Your buldak ramen noodles are ready to serve. Nice and spicy, isn't it? Who doesn't love a big bowl of spicy ramen noodles!
Recipe Tips & Notes
- The Heat Factor. You can easily make your buldak ramen as spicy as you'd like. I'm using a lot of different spicy elements, and you can use hotter versions of most of them, like extra hot hot sauce, extra spicy chili flakes, hot gochujang, and more.
- Making Buldak Ramen Less Spicy. If you'd prefer a milder version of this recipe, use mild gochujang, cut back on the gochugaru, and skip the hot sauce.
How Spicy is Buldak Ramen?
The hottest buldak ramen, Hot Chicken Flavor Ramen 2x Spicy is measured at about 10,000 Scoville Heat Units (SHU), which makes it a bit hotter than the hottest jalapeno pepper.
This is hot for some, but not very spicy for seasoned spicy food lovers. The Amazon reviews for the products are amusing with words like "thermonuclear" and "devil's noodles", when in reality, they probably won't be hot enough for practiced chiliheads.
My homemade version will bring you quite a bit more heat.
Storage
This recipe will last 1-2 days in the refrigerator in a sealed container. You shouldn't keep it longer than that.

Ingredients
FOR THE BULDAK (FIRE CHICKEN)
- 8 ounces boneless chicken cut into bite-sized pieces (use chicken breast or thigh)
- 1 tablespoons gochujang
- 1 tablespoons gochugaru Korean chili flakes
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon corn syrup or honey
- 2 garlic cloves minced
- 1 teaspoon minced ginger
- 1 tablespoon vegetable oil
FOR THE BULDAK RAMEN
- 5 cups chicken broth
- 4 cloves garlic smashed
- 1 thumb-sized knob of fresh ginger peeled and sliced
- 3 tablespoons gochujang
- 1 tablespoon chili crisp or use chili oil
- 1 tablespoon soy sauce
- 1 tablespoon chili-garlic sauce or use sambal oelek
- 1 teaspoon rice wine vinegar
- Hot sauce to taste use your favorite – sriracha is great here
- 4 ounces ramen noodles
- Extras/Garnish: 1 soft boiled egg halved, chopped green onion, sliced hot peppers, spicy chili flakes, extra chili crisp for drizzling

Oh wow, this was superb! My husband and son have large appetites so for the 3 of us I made the recipe for 5 (I did have leftovers), thanks for the recipe expand feature! The chicken is to die for (son asked me to make this on it's own) and the ramen is just a delight! I did use less gochujang in the ramen and it was perfect. I made the chili crisp and the gochujang sauce to make it authentic and it certainly did not disappoint, it was fabulous! Thank you!
