Who's ready for delicious Steak Fried Rice? I know I am! Steak fried rice is a perfect weeknight meal when you have leftover rice.
It cooks up in minutes once you've marinated the steak, which you can do the moment you get home, or even the morning before you leave.
It's very easy to customize with your favorite vegetables, and you don't need expensive cuts of beef for this recipe. Tougher cuts like flank steak or even chuck are great as the marinade tenderizes the meat, making it extra delicious with beefy flavor.
Who needs takeout? This is a dish you'll turn to over and over again.

Steak Fried Rice Ingredients

- FOR THE STEAK & MARINADE
- Beef/Steak. Use chuck, brisket, or flank steak. Tougher cuts are good as they will be tenderized by the marinade. You can use more tender cuts, like ribeye.
- Soy Sauce.
- Sesame Oil.
- Fresh Garlic.
- Baking Soda. Or use cornstarch. Baking soda is the key to "velveting" beef, which is a Chinese cooking method. It helps preserve moisture and tenderness in the meat and does not affect the flavor of the dish.
- FOR THE FRIED RICE
- Sesame Oil. Or use vegetable oil, for stir frying.
- Red Bell Pepper.
- Green Onion.
- Fresh Garlic.
- Day Old Rice. See Recipe Notes. Use white rice or brown rice, medium or long grain rice. Basmati rice is great for this dish.
- For the Sauce. Soy sauce, fish sauce, sesame oil, chili-garlic cause (or use sriracha or your favorite hot sauce).
- Eggs. Scrambled or beaten.
How to Make Steak Fried Rice - the Recipe Method
Marinate the steak in a small bowl with with a mixture of soy sauce, sesame oil, garlic, and baking soda. Marinate at least 1 hour or overnight for more flavor penetration.
When you're ready to cook, stir fry the beef and bell peppers in a hot wok or large skillet with a bit of sesame oil, just a couple of minutes, then add the green onion and garlic.

Stir fry rapidly for a minute, then add the rice and sauce ingredients.
Stir fry another 2 minutes to crisp up the rice.
Push the rice and steak mixture to the side of the pan and pour in the beaten eggs. Let them set into large curds, stirring just a bit, then mix them into the rice.

Boom! Done! Your steak fried rice is ready to serve. Garnish with sliced green onion, maybe a few chili flakes sprinkled on. I like a bit of hot sauce or sriracha. I hope you enjoy it!

Recipe Tips & Notes
- Using day-old rice is recommended for stir fries because it has less moisture, which results in more caramelization and better rice separation. Freshly cooked rice can result in a mushy stir fry.
- Stir frying over high heat and lots of stirring is best for flavorful browning and anything sticking to the wok or pan.
- If you don't have day-old rice, you can use fresh cooked rice. Spread the cooked rice over a sheet tray and refrigerate 1-2 hours, which will help dry it out.
- Feel free to use any of your favorite vegetables with this dish. Green peas, diced carrots and corn are very popular.
Storage & Leftovers
Leftover steak fried rice will last up to 5 days in the refrigerator in a sealed container. Reheat it gently in an oiled pan over low heat to enjoy again.
You can also freeze it for 2-3 months in freezer containers.

Ingredients

- 1 tablespoon soy sauce

- 2 cloves garlic minced
- 3/4 teaspoon baking soda (or use cornstarch)

- 1 red bell pepper chopped
- 5 green onions chopped
- 3 cloves garlic minced
- 4 cups day old cooked rice See Notes
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sesame oil
- 1 tablespoon chili garlic sauce or use sriracha or hot sauce for spicy
- 2 large eggs scrambled
Instructions
- Add the beef to a large bowl. Whisk together the soy sauce, sesame oil, garlic, and baking soda, then toss with the meat to coat evenly. Marinate at least 1 hour or overnight for more flavor penetration.
- Heat the sesame oil in a wok or large pan over high heat.
- Add the beef and bell pepper and stir fry for 2 minutes, getting all sides.
- Add the green onion and garlic and stir fry rapidly for 1 minute.
- Add the rice, soy sauce, fish sauce, sesame oil, and chili-garlic sauce. Stir fry for 2 minutes, until the rice gets slightly toasty.
- Move the rice aside and pour in the eggs. When it starts to set, gently stir until you get large curds, then stir them throughout the rice. Serve.
