We’re trying to shed a few pounds over here in the Madness household, so we’re incorporating a bit more “lighter” fare into the menu, and it is working. The thing I like about padron peppers is that they are not very spicy but do offer enough kick to bring some heat. Today, I seasoned some salmon with a bit of salt, chili powder and grated lemon peel, then seared them over high heat and baked them for 10 minutes. The salmon fillets always come out nice and juicy this way. While they were cooking, I had the whole 10 minutes to consider – what can I add to the salmon to finish it off? Looking through my fresh ingredients, I realized I could whip up a quick homemade guacamole, which would be great, but then I thought – what if I incorporated the guacamole ingredients without actually making the guacamole?
