Capsicum Annuum
The Albino sweet pepper is a block pod type that grows 4-4.5 inches long by 2-2.5 inches wide. It is a thick fleshed pepper characterized by the color of its skin which matures from a pale yellow color to orange and finally red. It is a bell type chili pepper.
The pods grow upright but begin to grow downward. They are early season peppers, typically producing pods from early summer onward. The plants are small, about 12-18 inches high typically.
Cooking with Albino Peppers
Cook them as you would any sweet pepper. They are large enough for stuffing, though I enjoy chopping them and using them as a starter for many meals along with onions, carrots and celery.
