This looks delish. I'll try it soon.
I recently had a revelation about sesame oil. I've always used it to flavor Asian noodles. A recently purchased bottle of sesame oil has no flavor; totally neutral. Then I realized I had previously been using toasted sesame oil. Huge difference; it's a potent, flavorful oil. It has a reduced smoking point though so good as a flavor agent in sauces rather than for frying.
Looking forward to this dish with some toasted sesame oil.

Can I use tahini instead of peanut butter?
Mike Hultquist says
Absolutely! Changes the flavor a bit, but still delicious. I've done this and really enjoy it.
Christine says
I was curious if you have tried or can use zucchini (zoodles) in place of rice noodles?
Mike Hultquist says
Christine, I have used zoodles in several recipes and they would work just fine for this recipe. Let me know how you enjoy it!
