A quick and easy Cajun dip recipe made with roasted red bell pepper, fresh garlic, creamy yogurt and sour cream, and a spicy seasoning blend, perfect for parties when you need big flavor fast.

At Chili Pepper Madness, we are TOTALLY ready for summer. Summer means fun and cookouts and gatherings and all the warm weather we can handle, and hugely, it means we get to hang out on the lake. Patty and I are lucky enough to live close enough to Lake Geneva, Wisconsin, to visit the lake regularly.

Very regularly, especially in the summer. We’ve hiked the perimeter several times and I can’t even count how many times we’ve lazily tooled around the water in a boat, soaking up the sun.

One of our favorite things to do on a warm summer day is boat out to one of the edges with friends, drop anchor, and chill. Seriously, look at the views we have?

No joke. We seriously LOVE this lake. You don’t need a whole lot to enjoy hanging on the lake. What do you need to bring along? Sunglasses? Check. Sunscreen? Yep. Bathing suit, towel, sandals, refreshments. Check.

Last thing – Don’t forget the munchies.

If you’re going to be hanging out on the lake on a lazy summer day, you gotta bring along something to snack on. Jumping in and out of the water builds up a bit of an appetite. It isn’t like you can easily serve up a three-course meal on a lake boat, and who would want to anyway?

You want something easy to make, something portable, something you can dig into, something everyone will love.

Don’t worry. I got you covered. May I present to you: Spicy Cajun Dip with Doritos. BOOM!

Spicy Cajun Dip – Recipe

Dips are perfect for taking along for a day on the lake. Whipping them together takes very little time and you can toss it into a container with a lid and bring it with you along with a bag of Doritos.

Patty goes insane for Doritos, and I enjoy them because of the variety of bold flavors available. You already know how much we love BOLD FLAVORS! Today I’m serving our dip with Spicy Sweet Chili Doritos, which truly ROCK, but this recipe works with so many Doritos flavors, like Cool Ranch or Nacho Cheese.

Seriously, this recipe is going to make your lake day EASY. All you need is a bag of your favorite Doritos flavor (preferably a spicy variety) and your dip, which only includes 6 ingredients. This is all you need…

Spicy Cajun Dip – Recipe - Ingredients

We have ourselves a red bell pepper, green onion, plain yogurt, crema, Cajun seasonings and fresh garlic. Simple enough! The dip has a bit of a spicy kick, so PERFECT for pairing with Doritos. The flavors truly complement each other.

How to Make This Spicy Cajun Dip – the Recipe Method

All you need to do is roast the bell pepper, then toss everything into a food processor. It will be easiest to roast the pepper in the oven if you’ve never done it before.

We have some information you can follow – How to Roast Chili Peppers – but in a nutshell, set your oven to BROIL. Slice the red bell pepper in half down the middle and place them skin sides up on a large baking sheet.

Set them into the oven beneath the broiler, about half way down in the oven, not too close to the heating element. Let the peppers roast about 15 minutes, or until the skins blacken and bubble up. Remove them and let them cool a bit. Like so…

Once they’ve cooled, peel off the skins – they come off very easily, then toss the peppers into a food processor along with all of the other ingredients.

Process it up and BOOM! Just about done!

All you have left to do is pour the dip into a container for bringing out to the lake. If you want to get REALLY creative, bring some extra chopped red pepper and green onions for a bit of garnish.

Only if you want a few “oohs” and “aahs” for presentation. And yo, don’t forget the Doritos. Your friends will be “oohing” and “aahing” for those anyway.

Ingredients
  • 1 red bell pepper
  • ¾ cup plain yogurt
  • ¼ cup Mexican crema or sour cream
  • 2 cloves garlic minced
  • 2 tablespoons chopped green onion
  • 1 tablespoon Cajun seasonings
  • Bag of your favorite Doritos for serving
Instructions

  4. Add the roasted red pepper, yogurt, crema or sour cream, garlic, green onion and Cajun seasoning to a food processor blender. Process until smooth.
  5. Serve in a bowl with Doritos!
