Here is a collection of recipes influenced by the many varieties of Jamaican cuisine, all with a spicy flair and, yes, incorporating a good variety of chili peppers and spicy seasonings. Some of my favorite include Jamaican Jerk Seasoning, Jerk Salmon and Jamaican Rice and Peas.
