Bean burritos are a super quick and easy go-to when you want delicious flavor in a hurry. You'll have these done in 10 minutes or so.
I love to stuff my bean burritos with tasty cilantro-lime rice, lightly toasted jalapeno slices, melty cheddar cheese and the tastiest beans around.
Lucky for me, I'm working with Serious Bean Co. beans. They're perfect for this! I greatly enjoy the quality and flavor of their beans - so perfect for easy meal additions for grilling in the backyard, hanging out with our friends.

All the flavor is built right in! Just heat them up. So perfect for cheesy bean and rice burritos!
Today I'm using a can of Serious Bean Co. Sweet & Smoky Chipotle Pinto Beans with Tomatoes and Adobo Spices.

I've seen recipes using black beans or refried beans seasoned with garlic powder or chili powder, but no need because these beans are already huge on flavor.
Let's talk about how to make bean burritos, shall we?

Bean Burrito Ingredients
- Pinto Beans. I'm using a can of Serious Bean Co. Sweet & Smoky Chipotle Pinto Beans with Tomatoes and Adobo Spices.
- Jalapeno Peppers.
- Olive Oil. For cooking the jalapenos. You can use raw sliced jalapeno peppers if you prefer.
- White Rice.
- Cilantro.
- Lime.
- Salt.
- Cheddar Cheese.
- Large Tortillas. Flour tortillas are great for this.
- Hot Sauce and Red Pepper Flakes. For serving.

How to Make Bean Burritos - the Recipe Method
Warm the Beans. Add the beans to a small pot and heat to medium heat. Simmer for 5 minutes to warm. Mash the beans slightly with a fork.

Cook the Jalapeno Slices. While the beans are warming, heat the oil to medium heat in a large pan. Add the jalapeno slices and cook for 5 minutes to slightly soften. Remove from heat.
Make the Cilantro-Lime Rice. In a small bowl, mix together the cooked rice, cilantro, lime juice and zest.

Assemble the Bean Burritos. To make the burritos, divide 1/4 of the warmed bean mixture, jalapeno slices, cilantro-lime rice and cheddar cheese between each tortilla.

Fold the Bean Burritos. Fold the sides of tortillas into burritos. Like so.

Brown the Ben Burritos. Heat the large pan back to medium high heat. Warm each folded burrito in the hot pan for 2-3 minutes per side, seam side down first, until lightly browned.

Recipe Tips & Notes
- Additional Ingredients. Bean burritos are easy to change up to your own preference. Try them with smashed avocado or spicy guacamole, extra beans, salsa, chopped lettuce or spinach, other spice peppers, black olives, crunchy tortilla chips, sour cream or others. Use your favorites!
- Oven Bean Burritos. You can also warm your burritos on the oven rather than pan heat them. Simply heat the oven to 375 degrees F and bake the burritos for 5 minutes on a baking sheet, or until warmed to your preference.

Storage & Leftovers
Storing your Bean Burritos in an airtight container in the fridge may allow you to store the leftovers for up to 3-4 days (2-3 months in the freezer). To maximize the storage life, make sure to refrigerate them promptly.

Ingredients
- 1 can flavored pinto beans - I'm using a can of Serious Bean Co. Sweet & Smoky Chipotle Pinto Beans with Tomatoes and Adobo Spices
- 2 jalapeno peppers sliced
- 1 teaspoon olive oil
- 1 cup cooked white rice
- 1/4 cup chopped cilantro
- Juice and zest from 1 small lime
- Salt to taste
- 8 ounces shredded cheddar cheese
- 4 large burrito flour tortillas warmed
- For Serving - Hot sauce red pepper flakes

This looks great, Mike! Super easy and quick. I’m thinking these would be good to batch and freeze for easy future meals, as is, without the add-ins like guacamole or sour cream… thoughts? Would you brown before freezing? Thanks in advance!

Thanks, Lisa. Yes, you can freeze these. Just make them with the beans and even the cheese and jalapenos, then wrap and freeze. You could brown them before freezing if you'd like to.
