These baked spicy hot wings are outrageously hot, rubbed with a mixture of 5 ground Carolina Reapers and served with a bottle of flaming hot sauce. This recipe is not for the faint of heart.
So here is the scenario. Patty plans a girls night out, leaving Mike all alone in the house. With nothing to do except to work on the latest crazy screenplay about people trapped in a swimming pool.
Weird, I know. What's a guy to do when he has no adult supervision? He makes the hottest dang chicken wings he's ever made and nearly destroys himself.
HOT! HOT!
They don't look all that hot, right? They look quite innocent sitting there, tasty actually, obviously CRISPY because the rub includes baking powder which seriously crisps them up, and they've been baked properly - not fried! - but these babies pack a MAJOR wallop.
We grew Carolina Reaper chili peppers last year and I dehydrated the majority of them. I enjoy grinding them down into powders for rubs and seasoning mixes. The Carolina Reaper is wacky hot and can top 2.2 Million Scoville Heat Units. Learn more about the Carolina Reaper here.
About Spicy Hot Wings
To get these spicy hot wings going, I started with a couple of Carolina Reapers and ground them into a powder in my molcajete. As I gazed down at the crushed peppers, a dangerous thought arose. "That doesn't look like much powder. Maybe I should use MORE reapers."
So, I added 3 more. Yes, 5 Carolina Reapers went into the mix and here you can see how they look when ground.
It still doesn't look like a lot, but oh baby! This is some serious heat. Toss in a few other seasonings, along with baking powder and flour, then rub down the wings and bake to crispy perfection, and you have yourself some crazy hot but delicious chicken wings.
But that's not all!
Not long ago I posted a hot sauce called "The Hottest Damn Hot Sauce I Ever Made." Yep. Serve these spicy chicken wings with that hot sauce. Or, go buy yourself your favorite brand of Carolina Reaper hot sauce.

Either toss the wings in a bit of the sauce or serve it on the side. Get even MORE heat, you wild people! These wings kicked my booty.
But in a good way. Took me a while to eat them, but these extreme hot wings were OH. SO. GOOD. Feel the burn! The reaper burn.
Spicy Hot Wings Ingredients
- Chicken Wings. 2 pounds, separated and wing tips removed.
- Olive Oil. 2 tablespoons.
- Carolina Reaper Pods. 5 dried.
- Baking Powder. 1 tablespoon.
- Garlic Powder. 1 tablespoon
- Salt. 1 teaspoon.
- Flour. 1 cup.
- Superhot Hot Sauce. For serving
How to Make Spicy Hot Wings - the Recipe Method
Firstly, pat the wings as dry as you can get them. This will help with the crispiness.
In a large bowl or molcajete, grind the Carolina Reaper pods into a powder. Add baking powder, garlic, salt and flour. Mix to combine.
Lightly oil the chicken wings then dip them into the seasoned flour mixture. Get them nicely coated. The baking powder helps with the crispiness.
Heat oven to 250 degrees. Set the wings onto a lightly oiled baking sheet and bake for 30 minutes.
Increase oven heat to 425 degrees and bake another 30 minutes, or until the wings are cooked through and the skins are nice and crispy. You can also hit them with the broiler a couple minutes to crisp them up even more.
Serve your spicy hot wings with the hot sauce on the side, or toss them in the hot sauce for even HOTTER wings, you crazy heat-loving animal!

Holy Moly, these are hot!! But sooooo good. I had to cut the salt in half because of my low-sodium diet so I replaced the half-teaspoon of salt with smoked ghost pepper powder, but didn't tinker with the recipe otherwise and they came out great. In the oven crispiness! Awesome. I have Reapers coming out of my ears this year and I could see using this spicy coating on a myriad of foods. Seafood, pork chops...who knows?
