Ghost peppers offer a blazing heat and flavorful fruitiness to many dishes. The ghost pepper (aka the Bhut Jolokia) is one of the hottest pepper in the world, topping over 1 Million Scoville Heat Units.

The flavor is an intense sweet chili flavor, and the heat does not kick in for 30 – 45 seconds. Once the heat kicks in, expect a bit of sweating and watery eyes, which can linger a while. Once you get used to that heat, though, you’re rewarded with wonderful flavor and spice.

Some of my favorite ghost pepper recipes include Ghost Pepper Jelly, which is a simple, spicy, easy-to-make recipe for ghost pepper jelly with sugar, pectin, and lots of fresh ghost peppers. Perfect as a spread but also as a starter glaze or sauce.
