What Is Chipotle Chicken?
Chipotle chicken is chicken marinated with smoky chipotle peppers, usually chipotle peppers in adobo sauce, along with citrus, garlic, and spices. The marinade gives the chicken a delicious smoky heat with a slightly tangy flavor.
It’s inspired by the style of chicken served at Chipotle Mexican Grill and other taquerias, where the chicken is cooked until nicely charred, then chopped for tacos, burritos, and burrito bowls.
My version focuses on bold chipotle flavor with a simple marinade that cooks up quickly in a skillet or on the grill.

- Chicken. I use boneless chicken breasts for a lean option, though chicken thighs are excellent for extra flavor and juiciness.
- Chipotle Sauce. Chipotle peppers in adobo sauce provide the perfect smoky heat. You can blend the peppers and sauce together for a smooth marinade.
- Chipotle Powder. This boosts the chipotle flavor even further and adds extra smoky depth. It's OK to skip it if you need to.
- Lime Juice. A squeeze of fresh lime brightens the marinade and balances the smoky spice.
- Garlic Powder, Onion Powder, Cumin. Flavor additions.
- Salt. To taste.
- Olive Oil. For cooking the chicken and getting a nice sear.
Chipotle Chicken Marinade
This chipotle chicken gets its bold flavor from a simple smoky marinade made with chipotle peppers in adobo, lime juice, and warm spices.
For the best flavor, marinate the chicken for at least 1 hour. Overnight marinating will give the chicken an even deeper chipotle flavor.
This marinade works beautifully with:
- chicken breasts
- chicken thighs
- grilled chicken
- tacos and burrito bowls
- meal prep
How to Make Chipotle Chicken
First, place the chicken in a wide bowl or resealable bag.
Make the Chipotle Chicken Marinade. In a small bowl, whisk together the chipotle sauce, lime juice, chipotle powder, garlic powder, onion powder, cumin, and salt. This is your chipotle marinade.
Pour the marinade over the chicken and rub it into the meat so it is well coated.
Cover and refrigerate for at least 1 hour to allow the flavors to penetrate the chicken. For the best flavor, marinate overnight.

When ready to cook, heat olive oil in a large skillet over medium-high heat.
Cook the chicken for about 5 minutes, then reduce the heat to medium. Flip the chicken and cook another 7-8 minutes, or until it is cooked through and reaches an internal temperature of 165°F.

Let the chicken rest for about 5 minutes, then slice or chop it for serving.

Recipe Tips & Notes
- Marinate longer for deeper flavor. One hour works, but overnight marinating gives the chicken much stronger chipotle flavor.
- Use chicken thighs for juicier results. Thighs stay especially tender and develop great char when cooked.
- Blend the chipotle peppers. If using whole chipotle peppers in adobo, blend them with the sauce so the marinade coats the chicken evenly. Or use canned "chipotle sauce", which is typically labeled as such.
- Don't overcook the chicken. Remove the chicken when it reaches 165°F to keep it juicy.
- Chipotle chilies option. To use dried chipotle peppers, soften them in hot water, remove the stems and seeds, then, process with the chipotle sauce for extra chipotle flavor. Ancho chilies are great here, too.

This chipotle chicken is extremely versatile and works for all kinds of meals.
Try it with:
- burrito bowls with rice, beans, and salsa
- tacos with fresh cilantro and lime
- salads or taco salads
- quesadillas
- wraps and sandwiches
Chipotle Chicken Burrito Bowl
This chipotle chicken is perfect for making homemade burrito bowls. Start with a base of rice or cauliflower rice, then add chopped chipotle chicken, black beans, roasted peppers, avocado, salsa, and fresh cilantro.
Finish with a squeeze of lime or a drizzle of creamy chipotle sauce for extra flavor.

Grilled Chipotle Chicken Option
This recipe is fantastic on the grill.
Preheat your grill to medium-high heat and lightly oil the grates.
Grill the marinated chicken for about 6-7 minutes per side, depending on thickness, until the internal temperature reaches 165°F.
Grilling adds a wonderful smoky char that pairs beautifully with the chipotle marinade.
How to Spice It Up
Want more heat? You’ve got options.
- Add extra chipotle peppers in adobo to the marinade.
- Sprinkle in cayenne pepper or chili flakes.
- Finish the chicken with your favorite hot sauce.
As a chilihead, I often toss in an extra chipotle pepper or two or extra chipotle powder for a deeper smoky kick.
Storage & Leftovers
Store leftover chipotle chicken in an airtight container in the refrigerator for up to 3-4 days.
To reheat, warm it in a skillet over medium heat until heated through. You can add a splash of water or chicken broth to keep it moist.
This chicken is also great for meal prep. Store it sliced or chopped so it’s ready to add to bowls, tacos, and salads.
To freeze, add the finished chicken to freezer bags and freeze for 3 months or longer. Chipotle chicken freezes beautifully.

Chipotle Chicken Recipe
Ingredients
- 2 6- ounce chicken breasts
- 4 tablespoons chipotle sauce
- 1 tablespoon lime juice
- 1 tablespoon chipotle powder use chili powder as a substitute
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cumin
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Add the chicken to a wide flat bowl or to a sealable plastic bag.
- Whisk together the chipotle sauce, lime juice, chipotle powder, garlic powder, onion, powder, cumin and salt. Pour over the chicken. Be sure to rub the sauce into the chicken.
- Cover, then refrigerate and marinade at least 1 hour. You can marinade overnight for more chipotle flavor.
- When you’re ready to cook, heat a large pan or your grill to medium-high heat. Add the olive oil.
- Cook the chicken breasts about 5 minutes, then reduce the heat to medium. Flip the chicken and continue to cook another 7-8 minutes, or until it is cooked through. It should measure 165 degrees F. internally.
- Let the breasts rest for 5 minutes, then slice and serve.

In this recipe - The Chipotle Sauce, is that the sauce in the can of chipotle chilies? And I never have seen chipotle powder.

Nancy, yes, use the canned chipotles in adobo, or there is also simply the canned chipotle sauce (same thing, but without the chipotles in it). Both are great!

Hi, Mike! I hope you won't mind a couple of questions about your Quick and Easy Chipotle Chicken recipe. Are the 4 tablespoons chipotle sauce from a can of chipotle chilis in adobo? Or is chipotle sauce a separate recipe on you website? I have dried chipotle peppers, can I grind them in a spice mill to make a tablespoon of powder. Or could I rehydrate the dried chilis and measure out a tablespoon?? I hope these questions aren't annoying. I am very interested in trying your recipe!

No problem, Denise. I address this in the notes. "You will usually find canned chipotle sauce in the Mexican or International section of your local grocery store. You may find chipotle peppers in adobo sauce, which is great for this recipe. Just stir them up or process them in a food processor to make them more of sauce. So good." Also, you can use some of your powder to taste, but would need to add in tomato sauce to round it out. I would just use the chipotles in adobo sauce. I hope this helps.

Fantastic and SO easy!! I marinated chicken thighs for 48 hours, then indirect heat on the grill. Wow!!! I was a little confused about exactly what chipotle sauce was until I read through your article above the recipe. I always puree my chipotles in adobo sauce before using, so that's what I used as chipotle sauce (and I might have added just a wee bit more than the recipe called for, lol).
