This classic Buffalo Wings recipe keeps it simple with spiced baked chicken wings tossed in homemade Buffalo sauce. Learn how to make Buffalo wings at home.

If you’ve ever ordered chicken wings at a restaurant, you most likely received a simple yet classic Buffalo style basket of wings. It’s a very simple recipe as well as a simple presentation. Buffalo Wings are simple baked of fried chicken wings that are tossed in what’s called “Buffalo Sauce”, which at it’s core is a mixture of hot sauce, butter, and other seasonings.

Buffalo sauce has nothing to do with buffaloes. The sauce was actually named for Buffalo, New York, where the sauce was invented, at the famous Anchor Bar.

There is no big secret to making Buffalo Wings, other than making sure you have a good Buffalo Sauce. I have information about that in the recipe notes section below.

Cooking Methods

Almost every wing joint I’ve ever been to serves up deep fried Buffalo wings. I have no issue with fried wings – in fact, I greatly enjoy them. However, they can get quite messy when making them at home, so I either bake or broil my chicken wings. The recipe calls for baking them, which is the easiest and most foolproof, though I have included some frying information with the recipe as well.

Ingredients Needed to Make Buffalo Wings

  • FOR THE BUFFALO WINGS
  • 2 pounds chicken wings separated and wing tips removed
  • 1 tablespoon baking powder
  • 1 tablespoon garlic powder
  • 2 tablespoons chili powder
  • Salt and pepper to taste
  • FOR THE BUFFALO SAUCE
  • ½ cup Louisiana style hot sauce
  • 5 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon spicy chili flakes, optional for extra spicy Buffalo wings

How to Make Make Buffalo Wings – the Recipe Method

  1. First, pat the wings as dry as you can get them. This will help with the crispiness.
  2. Set the wings into a large bowl and season with baking powder, garlic powder, chili powder, basil, and salt and pepper. Toss to get them nice and coated. The baking powder helps with the crispiness.
  3. Heat oven to 250 degrees. Set the wings onto a lightly oiled baking sheet and bake for 30 minutes.
  4. Increase oven heat to 425 degrees and bake another 30 minutes, or until the wings are cooked through and the skins are nice and crispy.
  5. For the simple Buffalo sauce, add the butter and hot sauce to a small pan and heat to low. Melt the butter then garlic, along with spicy chili flakes if you prefer extra spicy Buffalo wings. Swirl and heat to combine.
  6. Remove from heat and toss with the wings.

Boom! Done! Hot wings are ready to serve! They really are the best, better than any restaurant. And they’re perfect for game day. They’re crispy and delicious and so much more.

Recipe Tips & Notes

  • Fried Buffalo Wings. This recipe calls for baking the Buffalo Wings, but you can fry them per any fried chicken wings recipe – several inches of frying oil heated to 350 degrees F, then fry the wings about 8-10 minutes until cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  • Crispy Baked Buffalo Wings. The secrets to making very crispy baked wings is to pat them very dry to remove moisture, which is what causes the skins to steam and get flabby. Also, baking powder helps to draw that moisture out of the skins, making them extra crispy when they bake See my post on How to Make Crispy Baked Chicken Wings – Step by Step.
  • Homemade Buffalo Sauce. There are many different Buffalo sauces you can buy from the grocery store, though it is so much better when you make it at home. This recipe keeps is super simple with only hot sauce, butter and minced fresh garlic. However, if you’d like a more developed version, try my own Homemade Buffalo Sauce Recipe. It’s a winner!
  • Marinade. If you’d like even more flavor on your wings, try marinating them in some Buffalo sauce or in a simple brine of salty water and other herbs and seasonings. They may not come out as crispy when baked, but you can still fry them, but they will develop additional flavor.
  • Grilled Wings. Instead of baking, broiling or frying, you can also grill your chicken wings then toss them in Buffalo Sauce. For grilling, simply heat a grill to medium heat and grill the wings for 20 minutes, turning once halfway through. Keep an eye on them so the skins do not overcook. They are done when they reach an internal temperature of 165 degrees F. when measured with a meat thermometer. Toss them with your Buffalo sauce and serve them up!

    Ok…so I chickened out (pardon the pun) using one of your more exotic wing recipes. I went with the basic recipe…with a couple modifications. Because I had 5 pounds of wings… I had to increase the ingredients…more butter…more hot sauce (Frank’s)… more chili flakes… more garlic…and added some horseradish (I love horseradish!). I put them in my smoker for 3 hours…15 minutes…about 200 or so degrees. Absolute perfection! (Although The Wife added more hot sauce). I also left the tips on… which I won’t do again. My advice? If you need a starting point for making flavorful wings… this is the recipe you should start with. We’ll be doing this again…
